INGREDIENTS

(serves 6)

3 1/2 c. mixed fresh berries

1 1/2 t. ground cinnamon

1 1/2 t. lemon juice

1 c. all-purpose flour

1 1/4 c. sugar, divided

1 t. baking powder

1/2 c. milk

3 T. unsalted butter, melted

1 T. cornstarch

1 c. water

RECIPE

Preheat oven to 350 degrees F. or use a Dutch oven. Combine berries, cinnamon, and lemon juice in a 9 x13-inch baking pan. Combine flour, 3/4 cup sugar, and baking powder in a medium mixing bowl and stir. Add milk and butter while continuing to stir. Pour mixture over berries until covered with even layer.

Bring one cup of water to a boil. Meanwhile, in a small mixing bowl, combine cornstarch and 1/2 cup sugar and stir. Sprinkle over batter and berry mixture. Slowly pour boiling water over entire pan. Place baking pan in oven and bake for 45 to 50 minutes, or until crust is golden brown. Remove from oven, allow to cool slightly, and serve warm with vanilla ice cream or whipped cream.
